A nostalgic quick mash.
This is a comfort dish for me. It reminds me of my childhood where my moeke (grandma) often made carrot mash for me, served with thin sausages. Of course I never get it as well prepared as she could make it.. but I do my best!
This dish is as simple as it gets, making it perfect for a busy weekday. Or, if you love potatoes like me, this dish is just perfect any day of the week.
Carrot mash
5 minutes preparation + 15 minutes cooking — serves 2
Ingredients
- 700 grams potatoes
- 400 – 500 grams carrots
- 200 ml milk
- 1 pack vegetarian sausages
- Salt and pepper
- Oil
- Optional: gravy granules (make sure they’re vegetarian)
Preparation
- Boil one and a half liters of water in a kettle.
- Peel the potatoes and cut into small cubes of no more than 2cm.
- Wash the potato cubes to remove the starch.
- Peel the carrots and cut into thin rings.
- Boil the potatoes in a pot with the pre-boiled water for c. 12 minutes.
- Add the carrots after c. 7-8 minutes and let it cook for another 4-5 minutes.
Preparing the sausages and mash
- Heat some oil in a large pan and once hot, add the sausages. Fry for c. 8-10 minutes until golden brown, turning frequently.
- Drain the potatoes and carrots in a large colander.
- Return the potatoes and carrots to the pot and add the milk.
- Mash everything until smooth but with rough bits of carrot.
Bringing it all together
- Season the mash with salt and pepper.
- If using, make a gravy by mixing some of the gravy granules with hot water.
- Serve the mash with the sausages and gravy.
